The challenge: the complexity of side-stream matrices

Agricultural waste products are chemically complex. The valuable proteins, fibers, and polyphenols contained within them are tightly bound in lignocellulosic matrices or compromised by bitter breakdown products. Standard off-the-shelf industrial enzymes often lack the specificity or environmental stability required to process these raw materials cost-effectively.
